(More customer reviews)I came across this product when looking at books on Molecular Gastronomy. Sodium Alginate is use in cooking as a thickener and for making fruit pearls. But this product is intended for fabric printing and carries a warning, "Do not take internally." My assumption then is that it is not food grade. If you want sodium alginate for cooking be sure that the product you are ordering is designated as food grade. The two star rating is purely as a warning to those, who like I, were looking for food grade and didn't read the product description carefully. Otherwise it may be perfectly good for its intended use. Try, this WillPowder Sodium Alginate, 16-Ounce Bags or L'Epicerie as a source of food grade sodium alginate.
