One reviewer advises not to use screens because the pizza will stick and then is ruined, etc. Not so. Screens are a great way to bake pizza, as evidenced by the fact that most major pizza chains use them. Your local Domino's or Papa Johns cooks dozens (sometimes hundreds) of pizzas per hour on screens. If they all stuck they wouldn't be in business long. Screens stick very rarely when prepped properly.
A new screen has to be coated in cooking spray and baked in a hot oven several times before it is ready for use. The more you treat a screen before first use, the less problem you will have once you start baking pizza. It's a bit of an inconvenience with new screens, but it only has to be done once.
After a few treatments, the cooking spray will bake on and the screen will start to turn a coppery brown color. When you get this dark coloration on the aluminum, the screen is ready for use. The screen should come with prep instructions. It's also best not to wash screens, as this can lead to sticking. Pizza places don't wash screens. You can dust the screen with a brush to remove crumbs, etc, then bake it in an oven to sanitize the surface.
